8 oz oyster mushrooms, trimmed and cut into bite-sized pieces
3 Tbsp olive oil
Salt and pepper
3/4 cup bread crumbs
1/2 tsp Old Bay
2 6-inch sub rolls
2 Tbsp mayonnaise
3 romaine lettuce leaves, sliced crosswise in 1/4-inch strips
1 tomato, sliced
Toss mushrooms with 1 Tbsp olive oil; season with salt and pepper. Add bread crumbs and Old Bay; toss gently.
Heat 2 Tbsp olive oil in a large skillet over medium heat. Add mushrooms and cook until golden brown.
Spread mayonnaise on sub rolls; line the bottom of each roll with lettuce, tomato, and mushrooms. Sprinkle with Tabasco to taste.
