Makes about 2 cups
2-3 green onions
1 16-oz can chickpeas, drained and rinsed
1/4 cup tahini
2 1/2 Tbsp lime juice
1/2 tsp salt
1/8 tsp cayenne
2 Tbsp olive oil
Paprika for garnish
Finely mince green onions in a food processor. Add chickpeas and tahini and process until smooth.
Add lime juice, salt, and cayenne and process until well combined.
Add olive oil and process until smooth. Adjust seasonings to taste.
Transfer to a bowl and sprinkle with paprika.
