Broccoli, Wild Rice, and Mushroom Stuffing

1/2 cup wild rice
2 cups broccoli, chopped
1/2 cup butter
1 1/2 cups mushroom, sliced
1 cup onion, chopped
1 16-oz package stuffing mix
14 oz vegetable broth
1/2 cup almonds, sliced (optional)


  1. Cook rice. Preheat oven to 350 degrees Fahrenheit; lightly grease a baking dish.

  2. Blanch broccoli; drain and rinse.

  3. Melt butter in a skillet over medium heat and saute mushrooms and onions until tender. Mix in cooked rice, broccoli, stuffing mix, broth, and almonds. Transfer to baking dish.

  4. Bake 30 minutes until golden.
