Baked Red Beans and Rice

Baked Red Beans and Rice

Serves 4


1 cup rice
1 1/4 cups vegetable broth
2 cups salsa
1 16-oz can kidney beans, drained and rinsed
1/2 tsp chili powder
Salt and pepper


  1. Preheat oven to 350 degrees Fahrenheit.

  2. Combine rice and broth in a lightly oiled 2-quart casserole dish. Stir in salsa, kidney beans, chili powder, and salt and pepper to taste.

  3. Cover tightly and bake until rice is tender, about 1 hour.
